Domenico "Mimmo" Schiattarella (born 17 November 1967 in Milan, Italy) is an Italian racing driver who competed briefly in Formula One in the mid-1990s for Simtek.

Having worked his way up through Italian junior formulae, Schiattarella, having made a deal with a sports marketing agency, joined the Simtek team for the European and Australian Grands Prix at the end of 1994. Despite only performing enough running to qualify for his Super Licence, Schiatterella performed well enough to out-qualify the Pacific cars, starting 26th in both races.

Schiattarella was retained for the first half of 1995, and the new chassis, the S951, had a potential. He finished ninth in the Argentine Grand Prix and managed to out-qualify teammate Jos Verstappen at the Monaco Grand Prix, but after his car was damaged by marshals attempting to move it, he did not start the race, and following the race Simtek folded. Schiattarella never returned to F1.
